Red Cabbage Colour is a pigment obtained from red cabbage leaves. Its principal component is anthocyanin. It is soluble in water and exhibits very bright red to purplish-red shade when used in acidic foods.

◆ It exhibits a purple red when PH <3.0,pink when PH 4~6 and blue when PH>6.
