Menthol, also known as menthol, mint ice, is a cyclic terpene alcohol flavor and fragrance, the appearance of a colorless needle or spindle column crystal or white crystalline powder. There are three asymmetric carbon atoms in the molecular structure, so it has four stereoisomers, and their aroma intensity and type and cool feeling are also different. Common natural menthol and synthetic menthol are two kinds. Natural menthol is a saturated cyclic alcohol obtained by the separation and purification of peppermint oil. The optical rotation is levorotatory. Synthetic menthol is made from lemon eucalyptus oil. Its main component, citronellal, is obtained by ring-ringing isopulegol, and then hydrogenated, or by the synthesis of thymol by m-cresol, and then catalytic hydrogenation to obtain a mixture of four menthol isomers, which can be obtained through precision vacuum fractionation. Refined synthetic menthol is an optically inactive racemate. It has bactericidal and antiseptic properties and can be used as a toothpaste, perfume, beverage, and sweetener. It is used in medicine to make cool oil, painkillers, gargles and so on.
