Capsaicin is a natural organic compound with the molecular formula C40H56O3, a tetra-terpenoid natural pigment extracted from the fruit of mature red peppers, which belongs to carotenoids. Pure capsaicin is deep carmine needle-like crystals (crystallized in petroleum ether), easily soluble in vegetable oil and acetone, trichloromethane, ether, soluble in ethanol, insoluble in glycerol and water. Its structure contains 11 conjugated double bonds, with 1 conjugated ketone group and 1 cyclopentane ring at the 6th position . Capsaicin has a bright color, high color value, strong coloring power, good color retention and high safety, and is widely used in the food industry for coloring aquatic products, meat, pastry, salad, canned food, beverages and other types of food.
