Corrosion resistance: 200 Series Vs AISI 304.
To compare the corrosion resistance of 200 series stainless steels with those to the chromium and nickel (q.v. AISI 304)
were performed several tests, over the years. The increased presence of chromium is a critical factor for corrosion resistance.
In the 200 series steels the presence of chromium is reduced to 15-16% (or even of 13-14%), much lower than the 18% of the
AISI 304. The AISI 304 is therefore more resistant to corrosion than the 200 series stainless steels.

Pitting resistance: 200 Series Vs AISI 304.
In addition to corrosion resistance, even the degree of pitting resistance is fundamental, especially to evaluate the uses of steel.
In this case the chromium and sulfur contents influence their resistance. Sulphide inclusions, in fact, increase the danger of explosion
of pitting. It becomes clear that the AISI 304 will have greater resistance to pitting compared to 200 series stainless steels.

Atmospheric corrosion resistance: 200 Series Vs AISI 304.
Finally we want to compare the resitance of these steels to atmospheric corrosion. Also in this case we find a clear difference
between the behavior of AISI 304 steel compared to Cr-Mn steels. The results of the tests (exposure to salt mist and cold formability)
showed a tendency to form martensite. Besides the fact that 200 series stainless steels are somewhat susceptible to cold cracking
after deep drawing. It is also clear that 300 series steels (e.g. corrosion resistance) are decidedly different from those of 200 series.

AISI 304 Grade is approved, standardized, and are the food contact materials of choice around the world.

For sanitary food handling applications, stainless steel AISI 304 Grade is a popular material choice. Not only can food-grade
stainless steel 304 stand up to punishing temperatures that would melt plastic, the material’s protective oxide layer helps prevent
the formation of rust that could contaminate foodstuffs.

Stainless steel is famous for being able to resist corrosion, but just because the surface of the steel looks shiny and smooth doesn’t
mean that it’s food-grade.

To meet key sanitary standards, the finish of the steel MUST eliminate any surfaces that could result in bacterial growth while being easy to clean/sanitize.

When it comes to the issue of food preparation, you want to be sure that you're getting the right quality of utensils and instruments to ensure
the health and safety of whatever you're making. This will invariably lead you to the question of what is food grade stainless steel and why is it important to use.

Food grade stainless steel is steel that is resistant to wear and tear and has heat resistance in such a way that it's safe for the use of cooking
various types of food. There are a number of different grades of steel such as 18/10, 18/8, etc. What this grade means is the amount of chromium
and nickel respectively in the steel. These, in fact, are the two most common grades of food grade stainless steel and are referred to as being
in the 304 grade. For example, food grade stainless steel of 18/8 is 18 percent chromium and 8 percent nickel.

304 grade stainless steel also has to have no more than 0.8 percent carbon and at the very least 50 percent or iron.
There are no other substances such as aluminium included in the creation of this grade of steel.

Stainless steel 304 has many applications, and one of them is specifically for the preparation of food. Food-grade stainless steel 304 is ideal for
use in the restaurant and food industry and even your own home kitchen. Let’s look at five things you need to know about stainless steel 304
as the go-to choice in a culinary setting:

Finish
Stainless steel 304 has a clean, non-rusting finish. Because of its blend of iron and chromium, stainless steel is resistant to many elements
that iron could not withstand on its own. Corrosion or long exposure to water would be detrimental to many metals, but not with stainless steel.
Douse stainless steel 304 with water to your heart’s content without any worry of rust.

Cleaning
Stainless steel’s 304 resistance to corrosion is very helpful when keeping food and beverage surfaces sanitary for use.

Grades
Not all stainless steel is created equal. The most popular grades of kitchen and food quality stainless steel are 304.

Stainless steel does not absorb colors, odors or other chemicals. This is important when trying to sanitize quickly

stainless steel 304 is widely used for food, surgery, and other uses.

Specifically, in the food industry, stainless steel 304 is exposed to heat, water, and harsh cleaning chemicals.
Through those exposures, food grade stainless steel 304 must remain durable, rust/corrosion free, and be easy to sanitize.
Further, the pitting resistance means it maintains a surface that’s easy to clean and maintain. Finally, the heat resistance
of the metal means it can be exposed to extreme temperatures without risking damage.
