STv98 is white to off-white powder  with cool flavor which is about 300 times as sweet as cane sugar with very slight bitter aftertaste in high concentration conditions. The melting point is 196-198 . STv is able to endure in high temperature, and more stable in acidic and alkaline solution (PH5-7). It also can be easily dissolved in ethanol. It belongs to nonfermented products so it can be widely used in the food which is difficult to sterilize by heating and would keep white without any Maillard brown reaction. Its much closer to cane sugar compared with the other natural sweeteners.
