Premium Quality Organic Wuyi Cliff Black Tea Jin Jun Mei, Golden Eyebrow JinJunMei  

The black tea, JIN JUN MEI( Golden Eyebrow) tea is Chinese black tea at its peak. It is produced in the original birth place Lapsang souchong, using similar but more delicate method, processed using only the top tip leaves.

The leaves of the JinJunMei are extremely elegant: a mixture of black, gold and yellow with fine, tight shapes. Its first brew is golden yellow, brightly clear with a fine golden fur floating on the surface. It has an uplifting mellowing first taste, followed by an elegant full-bodied aroma and beautiful/delicate after taste.

Brief Brewing skills:
1). Teawares :  Red stoneware and  white ceramic tea cups are good teaware to use for brewing the Jin jun mei tea.
2).  Water:   Good quality water, boiling at 95 - 100 centi degree. The water temperature is very important.
3). Volume of Tea :  Usually 5-8 g.  Depends on personal preference and teaware capacity. 
4). Skills: Filling the water from a high position, pouring the tea soup slowly and lowly.  Before next brew, make sure the last brew tea soup are poured out completely. 
5). Soak time: The first time, soaking time should be5- 10seconds only. The Jin Jun mei tea can also be brewed up to 10- 12 times as da hong pao tea.  But the soaking time is different, From first to tenth: 15 seconds,  25 seconds, 35 seconds, 45 seconds, 1 minute, 1minute 10 seconds, 1 minute 20 seconds, 1minute 30 seconds, 2 minutes, 2 minutes 30 seconds.

Storing of black tea:

As black Tea is exposed to a small to medium amount of processing, the leaves are subject to natural enzymatic breakdown by oxidation just like any other organic material. Black tea is best kept in the cool, dry place in an airtight container or even in a refrigerator. We recommend refrigeration which actually improves the taste of the tea, as well as making it last much longer. However, if refrigerated storage is used, the tea should be kept refrigerated at all times as successive warming and cooling will degrade the tea.
