Introduction about glucosyl steviol glycosides

White to light yellow powder, flake or granular. Its sweetness is 100 times of sucrose. Its cool sweet taste overcomes stevioside’s shortcomings of different purity, low solubility and bitter taste, making the sweetness closer to sucrose. It is commonly used to lactose and malt dextrin as dispersant, making sweetness dropped to 0.5 1 times of sucrose. It is often stable under the condition of food processing (acid degree and heating). In addition, Glucosyl Stevia is soluble in water and alcohol.

Natural low calorie sweetener and flavor enhancer.

Glucosyl steviol glycosides is a complex mixture of glucosides prepared by enzymatically modifying stevia extract to increase/change the degree of glycosylation.

In United States Patent 8318459 (Nov. 27, 2012) by Avetik Markosyan entitled Glucosyl stevia composition (assigned to PureCircle USA) it is demonstrated that improved sweetness profiles can be achieved.

Appliction of glucosyl steviol glycosides   

Glucosyl Stevia is usually quite stable as stevioside under the condition of food processing, improving the water dispersion by enzyme technology, having better solubility, which is very suitable for all kinds of drinks and wine products. Glucosyl Stevia is mainly used for low-calorie foods, carbonated drinks, juice, cold drinks, cakes, pickled products, aquatic products, etc.
