Coriander is an annual herb. Both the leaves (herbs) and the dried native seeds (spices) are used. The leaves are used for soups and other foods. The seed is an important ingredient in curry powder, pickles, sausages and pastries as well as a flavor. The seed is also the basis for coriander oil and oleoresin.
