Lycopene is a red, fat-soluble pigment with acicular dark red crystals, insoluble in water, slightly soluble in methanol and ethanol.Unstable to light and oxygen, when iron brown.Molecular formula C40H56, relative molecular weight 536.85, CAS NO.:502-65-8.There are 11 conjugated double bonds and 2 non-conjugated double bonds in the molecular structure, forming a straight chain hydrocarbon.Does not have the physiological activity of vitamin A, but has strong antioxidant function.When tomato is heated, the trans lycopene will be cis-isomerized to produce cis-lycopene, which is beneficial to improve the nutritional value of lycopene.Lycopene is found in tomatoes and has about twice the antioxidant activity of carotene.At present, eating tomatoes is the body's main way to obtain lycopene.
