Alginate gel is white or light-yellow powder. It can be dissolved into normal-temperature water to form viscous water solution and solidify into gelatin after some time.

Operation method: Stir the water while adding the gel slowly to form 2% water solution, and keep on stirring for around 10 minutes to make it totally dissolve, and then put it stable under normal temperature for around 25 minutes, it will then solidify into gelatin, the gel strength can reach to 1000g/cm2.

Compared with agar and carrageenan, alginate gel has its obvious advantages: carrageenan and agar can only be dissolved into hot water with temperature higher than 80℃, and can only solidify into gelatin after cooling to normal temperature. Agar also has the property of heat-nonresistance and will melt into water solution again when heating. While alginate gel can be dissolved in normal temperature water, and after some time it can solidify into gelatin automatically. It cannot be melted when being heated or even being boiled. The gelling time can also be adjusted according to the clients' request.

The typical specifications of alginate gel (dissolve in normal temperature, and heat-resistance) greatly expands its application sphere and make it suitable for usage in petfood, pet can and softcan. First configuring alginate gel into 2% water solution and then add minced meat in the solution and stir to even, and then put into cans or plastic bags to form the gelation food products.
