Fresh olive are naturally bitter to make them palatable. Olives must be cured to remove bitter compounds from them. We are using Turkish style olive curing in our olives where green olives are soaked in only salty water solution. The brine is changed regularly until olives become table black olive. Once, olives are fermented, they have a shelf life of 18 to 24 months (unopened). Unlike, Spanish type fermentation, no chemical additives used in the process.
